Fajitas They Make Me Happy

This past week we were sent this amazing package from Discovery

Well luckily enough one of our favourite meals is Fajitas so this was a winner with us. Below is the recipe we use for our meal.

Ingredients

  • 300g Quorn Chicken Style Pieces
  • Sliced Red and Yellow Pepper
  • Sliced Onion
  • 1 Discovery Fajita Kit
  • Discovery Soured Cream
  • Grated Cheese

What To Do

  • Fry the Quorn pieces in a deep frying pan or wok over a medium heat in a little oil.
  • When the Quorn is slightly browned add in the onion and peppers and fry for roughly 10mins
  • The add the fajitas seasoning and mix together and fry until the onions and peppers are cooked.
  • Quickly heat the wraps up in microwave for 50seconds then serve.

Normally I don’t have Soured Cream on mine but as they had sent some of their new Garlic & Herb Soured Cream and oh my gosh what a difference it makes, it adds a cool herby sensation to the spices of the fajitas. We will also be using this with a chilli next week.

I tried to make this week cheap but it really didn’t work. We have a few different items on the menu this week.

Meal Planning Monday – 13th August

Welcome to another Monday and I hope you’ve had a good weekend. The Olympics are over and I think everyone should be proud of everyone who took part.

Hopefully everyone has read My Fitness Week where I mentioned I was trying to bulk up a little so hopefully this week I will increase my overall calorie intake. With that in mind here are the meals for the week.

King Prawns, couscous, courgettes and new potatoes.

Courgette Bake with new potatoes. 

Quorn Meatballs with rice

Paprika Chicken with chips (Laura – Pasta)

Tuna Wedge Bake (Didn’t have it last week as went had a salad instead)

As you can tell the new potatoes and courgettes are ready to eat from the garden hence why they are used every other day.

I hope everyone has had a good weekend and you’ve all been enjoying the brilliant Olympic games.

This week its a few different things and I’m trying to add more protein to my idea and I’m currently on a 3,500cal diet to bulk up a little.

This weekend has flown by and the shopping this week was very much a rush job as you will be able to tell.

I did warn you it was quick.

This is possibly the first week in months that some form of salad isn’t on the menu mainly because we have managed to eat everything that has been growing in the garden.

I hope everyone has been enjoying this lovely weekend and the start of the school holidays.

We was on a bit of a money saving week and this is shown in the meals many of which are boring but cheap.

Monday 15th July – MondayMealPlanner

I’m pretty sure I’ve just slept through that last week as it only seems like yesterday I was writing the last meal plan.

I hope everyone has had a good week and is looking forward to the week ahead. I’m pretty sure most people are in the same boat in the fact that its the children’s last week of pre-school/primary school/secondary school.

This weeks meals are all our favourite simple meals.

Tuna and Egg Salad - I’m still using salad items from the garden and there’s no sign of us running out any time soon.

Courgette BakeThis was on last weeks meal but the courgettes in the garden weren’t quite ready.

PastaSimple but quick and easy.

PizzaThursday has to be quick as we will be heading off to Aly’s leaving evening at pre-school.

Toad in the HoleAfter seeing this on a few peoples menus over the last few weeks I decided to add it too mine.

Tuna Wedge Bake - It’s quick simple and tastes good.

It should have been a cheap week but as usual when the meals are cheap money gets spend on cleaning products and toiletries so it actually ends up being more expensive.

Meal Planning Monday – 9th July 2012

Well Monday has arrived again so that means another Meal Planning Monday.

I hope you all had good weekends and didn’t get too wet.

This weeks menu is a bit rushed as we were away this weekend so the meals got sorted late on Friday for delivery on Monday.

On Saturday we are at a Charity fund-raiser and they’re serving chilli

Meal Planning Monday – 2nd July

So we have entered July and I’m hoping for some better weather in July but I won’t hold my breath.

I hope that everyone had a good weekend and looking forward to the week ahead.

This week we have got a few different things but still including salad as the garden is full of the stuff.

New Potato SaladPotatoes from the garden and all salad stuff from the garden

Prawns and Cous CousGrilled courgettes, paprika king prawns and cous cous. 

A light evening snack as we will be out to Frankie & Benny’s at lunch time

Sausage SaladEverything bar the sausages will be from the garden

PicnicAs a little treat we will be setting up a picnic either in the garden or inside as the girls have been asking for one

Meal Planning Monday 11th June

Hope everyone has had a good weekend?

This weeks meals are very basic so I’m sorry for the plain menu.

Mackerel Salad – You can’t beat a lovely salad that’s grown in the garden and the mackerel adds a lovely strong taste

Fajitas – One of my favourite meals, its so simple to make and goes down a treat

Tuna Wedge Bake – Again just 3 ingredients and bam its done, so simple that its impossible to ruin

Meatballs and rice – Once again just 3 ingredients make up this quick and easy meal. Ideal with crusty warm bread

Tuna & Egg Salad – As you might be able to tell I have a lot of salad stuff to use up in the garden

Only five meals this week as on Saturday night me and Laura are staying up in Birmingham as we are going to Cadbury’s World so it will be a meal in the hotel.
